1. Quinoa and Black Bean Salad
This protein-packed salad is perfect for lunch or dinner and can be easily portioned for the week.
Ingredients:
- 1 cup quinoa, cooked
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 red onion, chopped
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 2 tbsp olive oil
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, red onion, avocado, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Pour over the salad and toss to combine.
