As the remaining chefs celebrate making it to the final four, they are surprised by an unexpected visit to the dorm by some of their loved ones. The surprise visit relaxes the contestants and brings them a little closer to each other, but early next morning it's every cook for themself as the competition resumes.

A car takes the final four to Bristol Farms, where Chef Ramsay tells them, "Every chef should know how to maximize profits." They are each given $15 and ten minutes to select stunning ingredients to prepare a dish that is not only a delicious culinary experience but also has the largest profit margin.

To help judge the challenge, Chef Ramsay brings in three special guests -- Chef David LeFevre from Southern California's Manhattan Beach Post, Bon Appetit magazine editor Hugh Garvey and General Manager of the Patina Restaurant Group Christian Philippo. The judges will taste each dish and reveal the dollar amount they would be willing to pay for it. The chef with the highest average price will win the challenge.

Justin is the first cook to present his dish. He has created roasted corn and mango jalapeƱo salsa with a chili shrimp. Hugh thinks the dish lacks liveliness, and the three judges put a price tag of $28.33 on the plate.

Barbie presents her pork chop with sauerkraut and sausage. The judges say the sausage doesn't add any value because the pork is the star, but she takes the top spot when her average price is tallied at $33.

Dana presents her panko-and-herb-crusted halibut. The judges think it is delicious and elegant. Her average price is rated at $34, and she becomes the new leader.

Christina is last up with her grilled swordfish and shrimp. David and Christian chastise her for leaving the skin on the fish. Hugh disagrees, saying it adds to the dish. In the end she comes up short by $1.67, and Dana wins the challenge.

As a reward Dana gets a chance to visit with David LeFevre at Manhattan Beach Post for an amazing lunch and some one-on-one training time. The other three contestants are given a unique punishment: they must separate and sort every ounce of trash in the Hell's Kitchen dumpster for recycling purposes.

Meanwhile, Dana learns to make Manhattan Beach Post's signature mussel dish and is pleased to discover that she will get to share it with her parents, who are seated in the dining room. While she lunches with her family, her three competitors are back in Hell's Kitchen preparing for the night's service.

Chef Ramsay tells the contestants they will now be tested on their leadership skills, as each of them will take a turn at running the pass. He also informs them that the president of the Paris Hotel and Casino in Las Vegas, David Hoenemeyer, will be in the dining room.

Justin is the first to run the pass. He gets off to a solid start, but his quality control is tested when Chef Scott uses crab in the spaghetti instead of lobster. Justin catches the mistake and sends it back. Noticing Dana dragging her feet in the fish station, Chef Ramsay calls her out on her bad attitude and accuses her of sabotaging Justin. She finally delivers her bass, and Justin regains control.

Dana then takes her turn to lead the kitchen. She has trouble being heard and gaining respect but eventually manages to get a firm grip. Still, when Chef Ramsay slips some sugar into the risotto and she doesn't notice, she fails her quality control test.

Now it's up to Barbie to show what she can do as head chef. After she reads the order tickets facing the dining room instead toward the cooks, Chef Ramsay coaches her to turn around and lead her brigade. When Justin and Dana fail to coordinate their stations, Barbie gathers them all together for a pep talk and works through the communication breakdown.

Sous Chef Scott throws Barbie for a loop by delivering celeriac mash to the pass instead of mashed potatoes. She immediately notices an issue and sends the dish back, allowing her to finish her turn running the kitchen on a positive note.

Last up to the window is Christina. When she acts too nice toward her friends, Chef Ramsay implores her to run the brigade instead of letting them run her. Dana's inability to deliver a properly prepared piece of cod brings the kitchen to a grinding halt, but Christina's assertiveness pays off, and the kitchen suffers only a minor slowdown. She passes her quality control test with flying colors when she immediately recognizes that she has been given arugula instead of spinach and then is able to send the finished entrees to the customers.

When the dinner service is complete, Chef Ramsay sends the four contestants to the dorm to decide among them which of them deserves to be sent home. Dana defends herself, but her three competitors think she is the weakest link. Back down in the dining room, Chef Ramsay informs the group that two people are going home this week, and the next service in Hell's Kitchen will be the last of the season. He eliminates Barbie, but the episode ends before he announces which two contestants will be heading to the finals and who will be sent home -- Dana, Christina or Justin. TO BE CONTINUED.
